A Dinner To Enjoy The Great Bonac Fireworks

East Hampton Point Restaurant in Springs, the waterfront-dining destination with spectacular sunset views overlooking Three Mile Harbor, presents a celebration tasting menu by Chef Thomas Rougey in honor of Bastille Day and the Great Bonac Fireworks Show on Saturday. The French-inspired five-course tasting menu, $125 per person with optional $70 wine pairing, reflects Chef Rougey's south-of-France roots and use of local bounty. Special menu dishes include striped bass crudo with lemon extra virgin olive oil, jalapeno, French radish and micro cilantro; vichyssoise with chive crème fraiche and American caviar; dayboat Montauk sea scallops accompanied by risotto with Crescent Farm duck; braised short ribs with confit potato, roasted cipollini and braising jus; and white peach and black plum semi fredo with port wine sauce. Paired wines will include sparkling, rosé, white and red wine selections sourced from vineyards as near as the Hamptons to France. Reservations for dinner, 5 to 11 PM, are recommended. Fireworks begin at 9:30 PM with prime views from the main and upstairs decks and dining rooms, dockside bar and marina. Chef Rougey's a la carte dining room and deck menus of New American fare will return on Sunday. According to the Clamshell Foundation, which dedicates this year's fireworks in memory of its founder, Rossetti Perchik, "The annual fireworks display started in the early 1970's when George Plimpton, the late writer, actor and founder of The Paris Review, began hosting fireworks parties at his homes in Sagaponack and Amagansett. Because of Plimpton's love for Paris, the fireworks have always been scheduled for the first Saturday after Bastille Day (the French national holiday, July 14, that celebrates the end of the French monarchy and the beginning of the modern republic)."
